Cilantro Honey Lime Chicken & Roasted Corn and Tomato Salad

Ingredients

1 lb chicken breast, thin sliced

1 tbsp better than bouillon

juice from 1 lime (~2 tbsp)

3 tbsp honey

1/4 cup cilantro

4 minced garlic cloves

1/2 tbsp soy sauce

chili lime seasoning

onion powder

paprika

salt & pepper

optional: reserve 1 tbsp marinade for brushing on chicken after cooking

Roasted Red Pepper & Corn Salad🌽

1 cup roasted corn

1 mini cucumber (about 1/2 cup)

3/4 cup diced cherry tomatoes

1/3 cup diced red onion

1/2 cup roasted red peppers

1/3 cup black beans

1 avocado

2 tbsp cilantro

1 tbsp rice vinegar

2 tbsp olive oil

2 tsp Italian seasoning from a good seasons dressing mix

1 tsp everything but the elote seasoning

Cilantro Lime Rice🍚

cook 1 1/2 cups basmati rice according to package instructions

after cooking, add in 2 tbsp cilantro and the juice of 1 lime (~2 tbsp)

stir in salt to taste

Makes 2 servings)

Assemble: Add 3/4 cup cilantro lime rice, honey cilantro chicken breast, and 1 serving roasted red pepper salad to a bowl🍚🍅🌽 garnish with extra cilantro and brush chicken with additional sauce if needed
