HONEY BUTTER CHICKEN & BISCUITS

2 10 oz. chicken breasts
4 cups all-purpose flour
1 Tsp. Baking soda
1 Tbsp. Baking powder
2 Tsp. Granulated sugar
1 Tsp. Salt
1/2 C. cold unsalted butter, cubed
1 C. Half & half
1/2 C. Cubed Unsalted butter
1 c. Buttermilk
1/2 c. Honey
4 Tbsp. Unsalted butter
2 Tsp. Chicken bouillon
2 Tsp. Cajun seasoning
2 Tsp. Black pepper
1 Tsp. Oregano
1 Tbsp. Louisiana hot sauce
4 C. Vegetable oil
4 Tbsp. Unsalted butter
Directions
1. In a glass mixing bowl, add and combine: • 2 C. All purpose flour • Baking soda • Baking powder Granulated sugar • Salt
2. Add unsalted butter and work it into the flour with a stainless steel dough blender (Pro- Tip: Use a metal fork if you do not have this tool)
3. Add in half and half and mix together until a clumpy dough is formed
4. Layer a metal baking tray with parchment paper and coat the parchment paper with non-stick spray
5. Create biscuits to the size of your preference and lay them onto the tray (I use a 1/4 C. Measuring cup for the most identical scoops)
6. In an oven preheated to 400°F bake the biscuits for 20 minutes
7. While in the oven begin frying your chicken
8.Butterfly two 10 oz. chicken breasts and cut each half into two square pieces
9.In a bowl add: 1 C. Buttermilk • Louisiana hot sauce 1 tsp. Chicken bouillon • 1 tsp. Cajun seasoning • Oregano • 1 tsp. Black pepper
10. Marinate your 4 pieces of chicken in this bowl ( Pro-Tip: you have the option to make the chicken before the biscuits if you desire a longer marinade)
11. In another small bowl add: • 2 C. All purpose flour • 1 tsp. Chicken bouillon o 1 tsp. Cajun seasoning o 1 tsp. Oregano • 1 tsp. Black pepper
12. Dip your marinated chicken in the seasoned flour and set to rest on an elevated drying rack while your oil heats up
13. In a pot or skillet add 4 c. Vegetable oil once 350°F drop your chicken in the oil and fry
14. To make the honey butter sauce, on medium heat add 4 Tbsp. Unsalted butter and once melted add 1/2 c. Honey
15. Stir until combined evenly. Form your sandwiches with the chicken and biscuits and coat in your sauce.
