CHOCOLATE FROSTED CHOCOLATE DONUTS

Ingredients

for the donuts:

4 eggs room temp

2/3 cup organic coconut oil melted and cooled to almost room temp

1/3 cup pure maple syrup

1 tsp pure vanilla extract

4 1/2 Tbsp coconut flour

2 tbsp tapioca flour

1/3 cup raw cacao powder or unsweetened cocoa powder

1/2 tsp baking soda

1/8 1sp salt

Coconut sprinkles or store bought organic sprinkles optional

for the glaze:

1/4 cup Kerrygold butter, or refined coconut oil

2 tbsp raw cacao powder or unsweetened cocoa powder

2 Tbsp pure maple syrup

1/4 tsp vanilla extract

Directions

• Preheat oven to 350 degrees and grease your donut pan. • Using a large bowl, whisk the eggs, maple syrup, coconut oil, and vanilla together • Using a small or medium sized bowl, mix the coconut four, tapioca Hour, cacao, baking soda and salt together. Add the dry ingredients to the large bowl and combine until the batter has thickened. • Grab a gallon size plastic bag and cut the corner off. Add the batter 1o the bag and pipe the batter into the donut pan. • Bake for around 15 minutes or until a toothpick comes out clean. • Remove from the oven once cooked through and let cool. • In a small sauce pan, melt the butter or oil over a low heat. Add the cacao and maple syrup and whisk together. Remove the sauce pan from the heat and add the vanilla. Stir together. • Drizzle the glaze over the donuts and allow to cool before serving. Add sprinkles, if you'd like.
