Crispy Smashed Potato & Cucumber Salad

Ingredients

For the potatoes & salad:

1kg baby potatoes

2 tbsp olive oil

1 cucumber

4 spring onions

15g coriander

1 tbsp black sesame seeds

2 tbsp crispy chilli oil

For the sesame mayo dressing:

2 tbsp tahini

1 tbsp toasted sesame oil

1 tbsp white miso

100g vegan mayo

1 lime

3 tbsp water

Directions

Simmer potatoes until tender, steam dry, then gently smash. Roast or air fry until golden and crisp.

Whisk together tahini, miso, sesame oil, lime juice, mayo and water until smooth.

Scoop the seeds from the cucumber and chop into half moons. Slice the spring onions and pick the coriander leaves.

Toss the crispy potatoes with the veg and sesame mayo dressing. Top with black sesame seeds and a big drizzle of chilli oil.

Potato salad just had a serious glow up. Crispy smashed potatoes, cool crunchy cucumber, fresh coriander and spring onions, all tossed in the most addictive sesame mayo dressing.
