Salt and black pepper, to taste
Garlic & herb seasoning (such as Mrs. Dash), to taste
2 tbsp oil (for searing)
For the sauce:
1 small onion, diced
3–4 garlic cloves, minced
1 ½ cups mushrooms, sliced
2 tbsp butter
1 tsp onion powder
1 tsp garlic powder
1/2 tsp smoked paprika
1 tsp Creole seasoning
1 tsp garlic & herb seasoning (Mrs. Dash)
1/3 cup all-purpose flour
2 cups beef broth (add more if needed for consistency)
1 tbsp Dijon mustard
2 tbsp sour cream
2–3 sprigs fresh thyme (or 1/2 tsp dried)
12 oz cooked broad egg noodles
Fresh parsley, chopped (for garnish)
