Seared Miso Chicken in Ginger Broth

Ingredients

Sounds complicated. Isn’t. A few simple moves—sear the chicken, simmer the broth, pour it over rice—and you get pure comfort with real flavor.

Crave It, Cook It

Recipe:

Chicken (double recipe if you have more chicken) - 4 chicken thighs

Chicken marinade:

2 tbsp miso paste

4 tbsp soy sauce

2 tbsp rice wine vinegar

2 tbsp honey

4 garlic cloves, grated

2 tbsp sesame oil

2 tsp mirin

Broth

4 cups chicken broth

1 spring onion, roughly chopped

4cm piece of ginger, roughly chopped

1 garlic clove, roughly chopped

Salt and pepper

Prep your rice. Start by searing your chicken thighs on high heat and cook through, make sure to get a nice glaze on your chicken, put aside. In the same pot begin your broth. Taste as you go. Once the rice and broth are done, put your bowl together. Rice, soup, top with chicken (you can add your favorite veggies), green onions and garlic chili crunch.
