Salmon and Rice Instant Pot

Ingredients

A nice cut of salmon, about a 1 lb slice (ideally wild)

2 cups rice, washed & soaked for 20 min or up to overnight

1 3/4 cup dashi broth or water

1/4 cup seaweed, rehydrated used hijiki)

1 tsp mirin

2 tsp soy sauce

starting with the hearties

1 tsp sesame oil

Toppings: broccoli sprouts, thinly sliced green onions

Directions

Directions:

1. Layer rice on the bottom with everything except the seaweed and salmon.

2. Sprinkle seaweed on top, followed by the salmon (skin side up)

3. Cook until the pot comes to a boil and then turn down to a low simmer for 15 minutes.

4. Before serving, remove the salmon skin and serve with broccoli sprouts and green onions.
