Key Lime Pie

Ingredients

Smoothie Base

1 serving vanilla protein powder

1 teaspoon vanilla extract

5 tablespoons (74 ml) lime juice

1 tablespoon (5 g) psyllium husk pinch sea salt

1 cup (152 g) zucchini, frozen

½ cup (118 ml) unsweetened coconut milk

Cream Layer

½ cup (75 g) plain Greek yogurt natural sugar substitute to taste

1 tablespoon (15 ml) lime juice

Crust Layer

3 tablespoons (24 g) almond flour

1½ tablespoons (18 g) sugar-free brown sugar

1 tablespoon (15 ml) water

Toppings lime zest and optional addi- tional squeeze of lime to taste

Directions

For the smoothie base: Place all ingredients in a blender and blend

on high until smooth.

For the cream layer: Whisk all ingredients in a small bowl.

For the crust: Mix almond flour and sugar-free brown sugar. Slowly add 1 tablespoon (15 ml) water to create a crumble. Transfer the smoothie base to the bottom layer of the bowl. Add the cream layer and then the crumble on top. Top with a little lime zest and an optional additional squeeze of lime. Serve.
