1 lb 93/7 ground beef
8 oz chickpea pasta (dry)
1 cup cottage cheese
1/2 cup milk
3/4 cup freshly shredded sharp cheddar
1/4 cup grated parmesan
1 cup clean marinara
1 cup bone broth
1 tbsp olive oil
Veggie Mix
1 medium carrot, finely diced or shredded
1 medium zucchini, diced
1 medium sweet onion, diced
2 cloves garlic, minced
Seasoning
1 tsp smoked paprika
1 tsp oregano
1/2 tsp ground mustard
1 tsp salt
1 tsp black pepper
Directions
Heat a large skillet or Dutch oven over medium heat. Add olive oil.
Add ground beef. Cook until browned, breaking it apart.
Add onion, carrot, and garlic. Sauté 3–4 minutes.
Stir in zucchini and cook another 2 minutes until slightly softened.
Add paprika, oregano, mustard, salt, and pepper. Stir to coat.
Stir in crushed tomatoes and broth. Bring to a gentle simmer.
Add chickpea pasta. Stir, cover, and simmer 8–12 minutes, stirring occasionally, until pasta is tender and most liquid is absorbed.
Reduce heat to low. Stir in milk and cottage cheese (blend cottage cheese with milk first if you want it ultra creamy).
Turn heat OFF. Stir in cheddar and parmesan until melted and creamy.
Let sit 3–5 minutes to thicken before serving.
