Garlic Butter Chicken and Rice Casserole

1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into chunks
1 1/2 cups long-grain white rice (uncooked)
3 cups chicken broth
1 cup heavy cream or milk
1/2 cup unsalted butter, melted
4 cloves garlic, minced
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded mozzarella or cheddar cheese (optional)
Optional garnish: parsley
Directions
Preheat your oven to 375°F and lightly grease a 9x13 baking dish.
Add uncooked rice to the baking dish and pour in the chicken broth and cream. Stir gently.
Stir in melted butter, minced garlic, garlic powder, onion powder, paprika, salt, and pepper.
Evenly arrange the chicken pieces over the rice mixture.
Cover the dish tightly with foil and bake for 45 minutes.
Remove foil, stir gently, and check rice tenderness.
If adding cheese, sprinkle it on top and return to the oven uncovered for 10 to 15 minutes, until the top is golden and the rice is fully cooked.
Let the casserole rest for 5 minutes, then garnish with parsley and serve warm.
