Top of Stove Meat Loaf

Ingredients

1 1/2 lbs. ground beef

1/2 cup dry bread crumbs

1 can tomato soup

1/4 cup chopped onion

1 egg slightly beaten

1 tsp. salt

dash pepper

1 T. shortening

1/4 cup water

1/2 tsp. prepared mustard

2 slices process cheese

Directions

Mix meat, crumbs, 1/4 cup soup, onion, egg and seasoning. Shape into 2 loaves; brown both sides in shortening in a skillet. Cover, cook over low heat 25 minutes. Spoon off fat.

Pour remaining soup mixture with water and mustard on loaves. Top with cheese. Cook 10 minutes uncovered. Can also be placed in oven for about 40 min. at 350.
