Quick Rainbow Pickles

Get yourself some veggies and some simple ingredients and make this gorgeous pickle that goes with anything! I love to add them to salads, BBQs, poke bowls, wraps, stir fries… or just eat straight out of the jar when I want something bright and crunchy.

You can use most robust crunchy vegetables like carrots and radishes. Red onions are another favourite because they become mellow and sweet when pickled and just go with everything!

INGREDIENTS (makes a big jar!)

1 large cucumber, deseeded and sliced

2 carrots, peeled and thinly sliced

1 cup radishes, thinly sliced

For the pickling liquid

1 teaspoon sugar

1 teaspoon salt

200ml apple cider vinegar (you might need a little more)

water

Directions

Put all the vegetables into a bowl and sprinkle with the sugar and salt. Massage the vegetables gently for a few minutes then drain the excess liquid.

Put the vegetables into a large jar. Pour over the vinegar, plus any extra you might need to half fill the jar.

Top up with water making sure the vegetables are completely covered. Close and shake the jar to mix everything up. Let it pickle for at least 20 minutes and serve.

Keep in the fridge up to five days.
