Apple Fritters

Ingredients

For the Meatloaf:

2 lbs ground beef (80–85% lean)

1 cup breadcrumbs (plain or Italian)

2 large eggs

½ cup milk

1 small onion, finely diced

2 garlic cloves, minced

½ cup ketchup (plus extra for topping)

1 tbsp Worcestershire sauce

1 tsp salt

½ tsp ground black pepper

½ tsp smoked paprika (optional)

For the Apple Fritters:

2 cups apples, peeled and finely chopped (Granny Smith or Honeycrisp)

1 cup all-purpose flour

¼ cup granulated sugar

1 ½ tsp baking powder

¼ tsp salt

2 eggs

⅓ cup milk

1 tsp vanilla extract

1 tsp ground cinnamon

Oil for frying (canola or vegetable)

Powdered sugar, for dusting

Directions

1. Make the Meatloaf

Preheat oven to 375°F (190°C). In a large bowl, mix all meatloaf ingredients until just combined. Shape into a loaf, place in a pan or on a baking sheet, and top with ketchup. Bake 55–60 minutes or until internal temp reaches 160°F. Let rest 10 minutes before slicing.

2. Prepare the Apple Fritters

Whisk dry ingredients in one bowl; beat wet ingredients in another. Combine, then fold in apples. Heat oil to 350°F. Drop spoonfuls of batter into oil, flatten slightly, and fry 2–3 minutes per side. Drain and dust with powdered sugar.

3. Serve

Slice meatloaf and serve with warm apple fritters. Garnish with fresh herbs if desired.
