Waterless Chicken Soup

1 whole chicken (~1500 g)
1 onion, cut into chunks
1 apple, chopped
4 napa cabbage leaves, roughly chopped
1 slice fresh ginger
Salt, to taste
Directions
Layer onion, apple, and cabbage in the bottom of a heavy pot with a tight-fitting lid.
Place chicken on top and add ginger. Do not add water.
Cover and cook on very low heat for 50–60 minutes, until chicken is tender and a natural broth forms.
Season with salt and serve.
Optional: top with scallions and furikake.
Tip: Use a heavy pot with a tight-fitting lid, such as a cast iron Dutch oven, to trap moisture and concentrate the natural juices.
