Ingredients:
•2 yellow squash, sliced and roasted or pan-seared
•6 oz cooked noodles (soba, udon, or rice noodles)
•1 tbsp gochujang
•1 tbsp soy sauce
•1 tbsp sesame oil
•1 tsp maple syrup or honey
•1 tsp rice vinegar
•1 clove garlic, minced
•Optional: fried egg, scallions, crushed peanuts
Directions
Instructions:
1.Roast squash at 425°F for 15–20 min or pan-sear until browned.
2.Mix gochujang, soy, sesame oil, sweetener, vinegar, and garlic.
3.Toss hot noodles with the sauce and add roasted squash.
4.Top with extras like egg, scallions, or peanuts.
