For the tomato sauce:

In a pan 4 tbsp olive oil in a medium heat
8 cups of cherry tomatoes seared and broken down
2 tbsp salt
2 tbsp black pepper
Once broken down, emulsified in a blender until a creamy liquid.
For the salad:
12 shishito peppers grilled (olive oil and salt)
2 peaches cut in 8 grilled (olive oil and salt)
4 cups cherry tomatoes cut in halves
Half squeezed lemon
2 tbsp olive oil
Salt and pepper season
Toss everything together lightly
For the burrata sauce:
2 cups burrata chopped
5 Basel leaves torn
2 tbsp plain yogurt
1.5 squeezed lemon
3 tbsp olive oil
1 tbsp salt
Blend everything together with a handheld blender until a liquid dressing
For croutons:
1 big piece of inside of sour dough
Covered with olive oil
Bake in over for about 30 minutes on 350 degrees F, monitor until golden brown
Garnish with:
Plate, sauce base, burrata in middle, surround with salad, spread the croutons, put the burrata dressing, pepper, diced chives, salt flakes, and enjoy!!
