Ground Beef Sweet Potato Bowls

Ingredientes

1 lb ground beef

2 tbsp tomato paste

1 tbsp chili powder

2 tsp cumin

1 tsp garlic powder

1 tsp onion powder

3/4 tsp salt

1/2 tsp pepper

1/4 cup water

1 tsp olive oil

3-4 sweet potatoes, washed and pat dry

1 tbsp olive oil

Salt and pepper

For serving:

Cheddar cheese (I love a pepperjack cheese as well!)

Greek yogurt

Avocado

Green onion & red pepper flakes

Drizzle of sriracha & honey

Instruções

Preheat oven to 425F and prepare a baking sheet lined with parchment paper.

Wash and scrub the sweet potatoes clean, then pat dry. Using a large fork poke a few holes in each potato. Place on a baking sheet and rub with olive oil, salt and pepper. Transfer to the oven and bake for 45-55 minutes until fork tender.

Meanwhile, heat a skillet with olive oil over medium heat. Add ground beef and break it apart with a spatula. Cook until browned and no longer pink, about 5–7 minutes. Drain excess fat if needed.

Mix in tomato paste and spices, stirring until well combined. Add the water, stir l and let simmer for 3-4 minutes, stirring occasionally, until thickened.

Slice the potatoes open and fluff the insides. Fill each potato with ground beef mixture then add cheese, avocado, greek yogurt and green onions to top. Drizzle with sriracha and honey. Enjoy!
