Viral Doner Kebab

In Bulgaria 🇧🇬 I grew up on Doner as it’s on every street corner. When I saw this method going around, it hit home! Thank you to @MezeMike for the inspo. This is my version so I hope you guys love it. You will need:
450 grams ground lamb, or any ground meat
1 grated onion or food processed into a paste with 1 tsp water
3 garlic cloves minced
1 teaspoon salt
1 ½ teaspoons sweet paprika
1 teaspoon oregano
1/4 cup plain yogurt
1 tablespoons olive oil
Instruções
Prep the meat mixture, divide it in half, and spread each portion very thinly on parchment paper. Roll each sheet up into a tight, flat “rope” using the parchment. Bake at 400°F for 35–40 minutes until fully cooked. Let it cool, unroll, and break it into pieces. Add a squeeze of lemon and broil briefly for color.
Serve the doner in a pita or bowl with lettuce, tomatoes, pickles, red onion, and garlic sauce (store-bought or homemade).
