Toddler Friendly Sausage Rolls, Packed with Veg

Sausage rolls are always a favourite in this house, so whenever I make them from scratch I pack in some hidden veg in there too! And it goes completely unnoticed 👀
My biggest tip is to finely grate the courgette and carrot, this makes it almost disappear into the mixture, no need to squeeze out the excess water either!

8 sausages, skin removed
1 small carrot, finely grated
1/2 courgette, finely grated
1 apple, grated
1 ready roll puff pastry
Egg/milk
1.Preheat oven to 180c and line a baking tray with baking paper
2.Add your sausage meat, grated apple, carrot and courgette to a bowl and mix well until combined
3.Spread your mixture in a line along one side of your puff pastry leaving around 1cm from the edge
4.Fold your pastry over and seal with a fork before cutting into mini rolls and brushing with a beaten egg or milk on your baking tray
5.Bake for 20-22 minutes until cooked through and golden in colour
