Making salads with hard vegetables is a great way of ncreasing the nutrient diversity and also makes it easier to pack in the fibre and plant points.
Here is my raw broccoli salad.
1 head and stalk of broccoli, finally chopped
1 Red peppers, finely chopped
1 large apple, finely chopped
30g toasted almonds
30 mls extra-virgin olive oil
30 mls apple cider vinegar
1 teaspoon Dijon mustard
Salt and pepper
Enjoy. 🥦
