1 JALAPENO PEPPER
½ C WATER
1.5 OZ BBQ SAUCE
6 0Z CORN MUFFIN MIX
Instruções
1. STEM JALAPENO, HALVE, SEED AND MINCE.
2. IN A MIXING BOWL COMBINE CORN MUFFIN MIX, JALAPENO, AND ½ C WATER UNTIL THICK BATTER FORMS.
3. PLACE A LARGE NONSTICK SKILLET OVER MEDIUM HEAT AND ADD 1 TBSP OLIVE OIL.
4. ADD ¼ C BATTER TO HOT PAN, COOK UNDISTURBED UNTIL BUBBLES FORM ON SURFACE AND BOTTOM IS LIGHTLY BROWNED. ABOUT 2 - 3 MINUTES. FLIP AND COOK ANOTHER 2 - 3 MIN AND TRANSFER TO PAPER TOWEL.
5. OVER MEDIUM HEAT ADD BLUEBERRIES AND BBQ SAUCE TO HOT PAN, STIRRING CONSTANTLY. ONCE BOILING REMOVE FROM BURNER. TOP CORN CAKES WITH SAUCE.
