Baked Kale Chips

Ingredientes

2 bunches kale

3 tablespoon creamy peanut butter (heaping), or any savory nut butter

1.5 tablespoon olive oil

0.75 teaspoon ground cumin

0.75 teaspoon chili powder (or substitute curry powder; we make them both ways)

0.75 teaspoon garlic powder

1/16 teaspoon cayenne pepper

1/4 plus 1/8 teaspoon salt

MAKE EXTRA SPICE MIX TO KEEP IN FRIG FOR WHENEVER YOU WANT YO MAKE KALE CHIPS:

1/4 cup creamy peanut butter (or other savory nut butter)

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon chili powder (or substitute curry powder, we make them both ways)

1 teaspoon garlic powder

1/4 teaspoon cayenne pepper

1/2 teaspoon salt

Instruções

Preheat the oven to 250 degrees F. Cut the leaves off the center ribs in large pieces, and spread on a baking sheet (not overlapping) lined with foil for easier cleanup. Discard the ribs.

In a small bowl mix the nut butter, oil, spices, and salt. Use a silicone brush to LIGHTLY brush each side of each piece of kale with the spice mixture. You don't want any of the leaves to be drenched in the mixture, so take your time doing this. The more evenly and lightly the kale leaves are coated, the better they will bake.

Bake for 30 minutes until crisp, but still green. Cool for a few minutes on the baking sheet before moving. If some kale chips are still a little flimsy or damp, remove the crisp chips and place the damp chips back in the oven for a few more minutes. Store in an air-tight container.
