Greek-style roast goat in tomato sauce

1,5 kilo goat leg

150 g red wine
4 sprig(s) thyme
3 sprig(s) rosemary
250 g canned tomatoes
300 g water
1 chicken bouillon cube
1 teaspoon(s) granulated sugar

Instruções
Preheat the oven to 160°C (320° F) set to fan.
Place a large frying pan over high heat.
Marinate the goat meat with salt, pepper, and 2 tablespoons of olive oil, and transfer it to the pan.
Sauté the meat for 2-3 minutes, until browned on all sides.
Remove the goat from the pan and put it in a roaster pan.
Cut the onions and the garlic into thin slices and add them to the frying pan, over high heat, along with the remaining 2 tablespoons of olive oil.
Sauté them for 3-4 minutes, until the onions are caramelized.
Add the tomato paste and sauté for 1 minute.
Deglaze the pan with the wine and allow the alcohol to evaporate completely.
Add the thyme, rosemary, canned tomatoes, water, chicken bouillon cube, and sugar, and let the sauce come to a boil.
Transfer the sauce to the roaster pan with the goat, cover with parchment paper, and cover the roaster pan with its lid. You should use the parchment paper to ensure that the meat will not lose its moisture in case the roaster pan does not seal very well.
Roast the goat in the oven for 2-2 1⁄2 hours.
Remove the roaster pan from the oven and uncover it.
Increase the oven’s temperature to 180°C (350° F) and roast the goat for another 10-15 minutes, until it is nicely golden.
Sprinkle with a little finely chopped parsley and serve.
