HIGH PROTEIN LENTIL AND TOFU KORMA

TOFU ‘CHICKEN’ CHUNKS
400g block of tofu
3 tsp cornflour
1 tbsp olive oil
Tofu marinade: 1 tbsp olive oil, 2 tsp nooch, 1/4 tsp turmeric, 1/2 tsp curry powder, 1/2 tsp garlic powder, 1/3 tsp salt, 1 tbsp lime juice. Mix together and add more oil if you need to make it runnier to coat the fried tofu.
ROASTED CAULI
1/2 a large cauliflower, or a whole small one, broken into florets
1 ½ tbsp olive oil
Spices for roasting: 1 tsp cumin, coriander, 1/3 tsp turmeric, pinch chilli, salt and pepper
CREAMY SAUCE:
30g soaked cashews
20g soaked almonds
290g silken tofu
1/3 cup nooch
Juice of one lemon
1/4 tsp salt
1/2 tsp garlic powder
Pinch of turmeric
Pinch of curry powder
Black pepper
WHOLE SPICES
1 tsp whole coriander seeds
1 tsp whole cumin seeds
Seeds from 4 green cardamom pods
MAIN BODY:
2 tbsp olive oil
1 white onion, diced
Pinch salt
4cm piece of ginger, grated
4 garlic cloves, grated
1 red chilli, deseeded and finely chopped (omit if you like less spice)
Ground spices: 1 tsp Garam masala, 1 tsp coriander, 1 tsp sweet curry powder, 1/2 tsp Kashmiri chilli powder (optional) 1 tsp turmeric, 1/3 tsp ground cardamom, half a cinnamon stick, pinch salt, pinch black pepper
More olive oil
4 medium grated tomatoes
235g cooked lentils (if from an organic tin, pour their water in too, if not, add 150ml water)
100ml water
TO SERVE: pink picked onion, fresh coriander, a little more of the creamy sauce for drizzle (wash a small amount of water around in the blender cup then pour over) Nigella seeds.
