Laraine's Sticky Lemon Slice

Base:
325g softened butter
400g flour
100g icing sugar
Topping:
400g sugar
5 eggs
5 tablespoons flour
1 1/2 tsp baking powder
4 lemons (juice and zest, approx 1/2 cup juice)
Instruções
Base
Put all ingredients in food processor, mix until it starts forming together. Line a 20/30 cm tin with baking paper and press base into tin. Bake for 20 minutes at 180°C or until lightly golden.
Topping
Wait until base is 5 minutes away from finishing then put all topping ingredients into food processor and process for 1 minute. Pour topping over base.
Bake for 45 minutes at 180°C. Leave to sit, best to cut the following day.
Notas
Original recipe has 500g sugar which I reduced as was too sweet for me
