Sheet Pan Spice Crusted Salmon & Potatoes (gf / Df) ✨ I Like

Ingredientes

3-4 pieces salmon or steelhead trout

1 ½ lbs baby potatoes, cut in half

½ tsp paprika

1 tsp cumin

1 tsp paprika, plus more for garnish

1 tsp garlic powder

1 tsp onion powder

2 tsp salt

3 tbsp olive oil, plus more for potatoes and searing salmon

Tarter sauce, or recipe below

Tarter sauce:

½ cup mayonnaise

2 tbsp dill, finely chopped

¼ cup pickles, finely chopped

2 tbsp capers, roughly chopped

¼ tsp salt

1 tbsp lemon juice

1 tsp lemon zest

To make tarter sauce, combine mayonnaise, dill, pickles, capers, ¼ tsp salt, lemon juice and lemon zest in a small bowl and mix well to combine. Refrigerate until ready to use.

Instruções

Preheat oven to 400°F. Drizzle olive oil over potatoes then season with salt, pepper and paprika and toss well to combine. Add to a parchment lined baking sheet and roast for 20 minutes cut side down.

To make fish, combine cumin, paprika, garlic powder, onion powder, 2 tsp salt and 3 tbsp olive oil in a small bowl and stir well to create a paste. Pat salmon filets dry and brush with spice mixture.

Remove sheet pan with potatoes from the oven, flip them over and transfer salmon to the pan skin side down. Bake for 10-12 minutes then turn broiler to high and finish the final 3-5 minutes directly under the broiler on high until fish and potatoes are lightly browned.

Serve with tarter sauce.
