Satay Pulled Pork Poutine

1-1.5kg boneless roast pork
1 small brown onion, diced
1 Tbsp minced garlic
1 x 270g can full fat coconut cream
3/4 cup smooth peanut butter
1 Tbsp sweet chilli sauce
1/4 cup (60ml) kecap manis (sweet soy sauce)
2 tsp soy sauce
1Tbsp brown sugar
1tsp fish sauce
Crispy French fries (or even potato wedges)
Grated cheddar or mozzarella cheese (1-2 cups depending on numbers of serves)
Instruções
Remove any netting or string from roast pork
Place pork fat/rind side down into slow cooker
Combine all other ingredients and pour over pork - I like to use a stick blender to easily combine them
Cook on HIGH for 5.5hrs
Remove and discard fat layer from the pork
Shred meat and return to sauce for an additional 30mins turned down to LOW
Plate up crispy fries, spoon over pulled pork, top with cheese (cheese can be melted in oven or brief blast in microwave)
Serve hot and with a hearty appetite!!
Notes
You can of course skip the chips and cheese and just serve this as a Satay Pulled Pork

If you need longer cooking time you could also cook it on low but you'll need a good 8-10hrs for a lovely tender result to easily pull apart
