Ingredientes

1 ripe banana

1 tsp vanilla extract

100g spelt flour (or plain)

1 tbsp maple syrup (optional)

1 tbsp olive oil or melted butter

Instruções

Mash banana and mix with all ingredients to form a dough.

Roll out and cut into shapes.

Bake at 180°C (160°C fan) for 10–12 mins.

Storage:

Airtight container for 3–4 days, or freeze for up to 1 month.

Sweet Potato Base Pizzas

Ingredients:

1 cup mashed sweet potato

1 cup oat flour or plain flour

Pinch of salt or herbs (optional)

Toppings:

Tomato purée, grated cheese, sweetcorn, chopped ham or veg

Instructions:

Mix sweet potato and flour into a dough.

Shape into mini pizza rounds and bake 10 mins at 180°C.

Add toppings, then bake another 5–10 mins.

Storage:

Fridge for 3 days, or freeze cooked bases (with/without toppings) for 1 month.

Banana Granola Balls

Ingredients:

1 ripe banana

1 cup oats

1–2 tbsp chia seeds (optional)

Small handful of raisins

Dash of cinnamon

Splash of milk if needed

Instructions:

Mash banana, mix in remaining ingredients.

Roll into balls.

Chill in fridge for 30–60 mins.

Storage:

Fridge for 3 days. Not freezer-friendly due to banana texture.

Strawberry Doughnuts

Ingredients (Doughnuts):

1 cup flour

1 tsp baking powder

1/4 cup coconut oil

1/2 cup Greek yogurt

2 tbsp honey

1 tbsp vanilla

1 egg

150g strawberries (mashed)

Icing (optional):

70g strawberries

2 tbsp cream cheese

Instructions:

Mix doughnut ingredients, pour into moulds.

Bake at 180°C for 12–15 mins.

Blend icing ingredients and spread over cooled doughnuts.

Storage:

Fridge for 2–3 days. Can freeze un-iced doughnuts for 1 month.
