Brown’s Bites
Dill Pickle Chicken Skewers

1 lb chicken thighs, cubed
1 24 oz jar dill pickle slices
2 tb hot honey
1 tb olive oil
2-3 tb ranch seasoning
1/3 cup unsalted butter
1/4 cup fresh dill, chopped
3 cloves garlic, mashed
1/4 cup chicken broth
Instruções
Cut chicken into bite size pieces and set aside.
Remove pickle slices from the jar and set aside.
Add the honey and whisk until combined.
Add the chicken pieces to the brine, cover and marinate for at least 30 minutes.
Remove chicken from marinade and add the pieces to the skewers, alternating with the pickle slices. I did 1-2 pieces of chicken, 2 slices of pickles, then 1-2 pieces of chicken and so forth.
Line up the skewers onto a tray and pat dry.
Brush with olive oil on all sides and sprinkle 1 tb of the ranch seasoning over the skewers.
Next, heat your grill to 450F. If using air fryer preheat to 400F for 5 minutes.
Once the grill or air fryer is HOT, add the skewers. For the grill, leave the chicken completely undisturbed for 7-8 minutes so they don’t stick, before flipping to the other side for another 6-7 minutes. Remove once cooked through completely (165F). For air fryer, air fry for 10 minutes, then carefully flip to the other side and air fry for another 8 minutes.
Remove from grill/air fryer and set aside.
To make the sauce, add the butter to a small sauce pan over medium heat. Once melted, add remaining ranch seasoning, dill, garlic, and chicken broth. Whisk for a few minutes until incorporated. After 5 minutes, remove from the heat and drizzle the sauce on top of the skewers. ENJOY!
