Ultimate Crockpot Chuck Roast

3 lb chuck roast
1 large yellow onion, sliced
5 cloves garlic, minced
2 tbsp avocado oil (or any high heat oil)
2 tbsp unsalted butter
1 packet ranch seasoning mix
1 packet au jus gravy mix
1 (8 oz) can tomato sauce
2½ cups beef broth (from a 32 oz carton)
1 tbsp Worcestershire sauce
3–4 sprigs fresh thyme
2 sprigs rosemary
2 bay leaves
Fresh parsley (for garnish)
Salt & pepper, to taste
Instruções
Season & Sear:
Pat your 3 lb chuck roast dry and season all over with salt, pepper, garlic powder, onion powder — your favorite blend works!
Heat 2 tbsp oil in a skillet over medium-high. Sear roast 4 minutes per side until golden brown. Lock in those flavors!
Transfer to Crockpot:
Place seared roast in your slow cooker.
Make That Flavor-Packed Gravy:
In the same skillet, add 2 tbsp butter. Sauté sliced onions for 2-3 minutes until softened.
Stir in minced garlic and cook 1 minute more.
Add:
½ can (4 oz) tomato sauce
1 packet ranch mix
1 packet au jus mix
Stir until combined and bubbling. Slowly whisk in 2½ cups beef broth until smooth. Add 1 tbsp Worcestershire sauce and stir for 3-5 mins until slightly thickened.
Pour & Herb It Up:
Pour that rich gravy over the roast in your crockpot.
Add thyme, rosemary, bay leaves right on top.
Low & Slow:
Cover and cook on LOW for 8 hours (or HIGH for 4-5 hours). Meat should shred easily with a fork.
Serve It Right:
Spoon over creamy mashed potatoes or buttery egg noodles. Garnish with fresh parsley and a spoonful of gravy for that chef’s kiss finish!
