Ingredientes

6-8 pears

Spices (total amounts)

3 tbsp cinnamon powder (1 tbsp for pears + 1 tbsp for crust + 1 tbsp for custard)

3 tbsp nutmeg powder (1 tbsp for pears + 1 tbsp for crust + 1 tbsp for custard)

3 tbsp clove powder (1 tbsp for pears + 1 tbsp for crust + 1 tbsp for custard)

Dry ingredients

1½ cups flour (1 cup for crust + ½ cup for custard)

1 cup + 3 tbsp sugar (1 cup for pears + 3 tbsp for custard)

Fats

3 tbsp melted butter (for crust)

Sunflower oil or melted butter (for brushing the pie dish)

Dairy & flavorings

2 cups milk

2 tbsp vanilla extract

Instruções

Preheat the oven to 450°f

Slice 6-8 pears into half moons

Add pear slice into a bowl. Coat pears with 1tbsp cinnamon powder, 1tbsp nutmeg powder, 1tbsp clove powder, 1cup of sugar. Let them sit while you prepare the crust.

In a standing mixer mix 1cup of flour with 3 tablespoons of melted butter, 1 tbsp cinnamon, 1tbsp nutmeg and 1tbsp clove powder. Mix on low speed until crumbly and incorporated.

Brush a 9” pie dish with stable oil (sunflower) or melted butter. Use the flour mixture and press it into the shape of the crust, covering the bottoms and sides in an even layer. Make sure there aren’t any holes.

Layer the pears in a nice arrangement overlapping each other at about 45° angle. Make sure they are tight and snug.

Bake this for 10 minutes while you prepare the next step.

In the bowl you used for the stand mixer mix 2 cups of milk with 2tbsp of vanilla extract, 3tbsp of sugar and 1 tbsp cinnamon, 1tbsp nutmeg and 1tbsp clove powder. Add about 1/2 cup of flour, but slowly, making sure it incorporates into the mix before adding more. The final result needs to stay liquid enough to pour, but a bit thicker than just milk.

When the first baking is done, open the oven and pour the mixture on top, making sure it incorporates with all the pairs, but not drowning them in it. Bake for another 15 minutes or until it lightly jiggles without being liquid.

Pull the tart out of the oven and let it cool down completely.
