All-in-one Breakfast Beans

Recipe:
Ingredients (makes three servings)
4 tbsp extra virgin olive oil, + more if needed
1 white onion, sliced
1 leek, white and light green parts, cut into thin half moons
250g chestnut mushrooms, finely chopped
5 minced garlic cloves
2 tsp smoked paprika
1 tsp cumin
1 tsp coriander
700g white beans + their juices. If the bean stock (the juice) is not salted, add half a ground veg stock cube.
3-4 medium tomatoes, sliced
Sauce ingredients:
280g silken tofu
20g nooch
35g raw cashew nuts or sunflower seeds, soaked in boiling water for 10 mins and drained
1 garlic clove or 1 tsp garlic powder
1 tsp smoked paprika
1 tbsp sweet white miso
1 tbsp lemon juice
1 tsp Dijon mustard
Salt and pepper to taste
A little water if needed to loosen the sauce slightly so it’s a pourable consistency
