Ingredientes

Gyros meat

1 lb ground beef (90/10)

1 lb ground lamb

1 red onion, finely grated

4 cloves garlic, mashed

3 tb olive oil

2 tsp cumin

2 tb dried dill

1 tb dried oregano

2 tsp kosher salt

1 tsp ground black pepper

Tzatziki

1 cup greek yogurt (@stonyfield)

2 persian cucumbers, finely chopped

3 cloves garlic, mashed

1 lemon, juiced

1/3 cup fresh mint

1 tb dried dill

1/2 tsp kosher salt

8 pitas

baby tomatoes, halved

chopped parsley

crumbled feta (athenosfeta)

Instruções

Preheat oven to 375F on the convection setting. Add the beef and lamb meat to a large bowl, along with all of the seasonings. Use you hands or a spatula to ensure everything is combined. Grease a vertical spit. Form three balls of meat, pressing them together. Add a piece of foil on top. Place the spit in the oven on the lower rack. Bake for 45 minutes then remove from oven, baste with the juices and pop it back in the oven for another 40-45 min (until it reaches an internal temperature of 160F). Remove from oven and let sit for 20 minutes before slicing. Now, make the tzatziki. Add all of the ingredients to a bowl. Toss well then taste and adjust salt as needed. Refrigerate for 20 minutes before serving so all the flavors really soaked in. Build your gyros. Lay warm pitas on a plate. Layer with tzatziki, gyros meat, tomatoes, parsley and a drizzle of olive oil. Fold up like a taco and enjoy.
