Caramelized Onion & Gruyère Biscuits

As part of a holiday table or all on their own, these biscuits are such a showstopper! These would also be insane to use in a breakfast sandwich. Dream big ppl!

Recipe:

2 cups all purpose flour

1 tbsp sugar

1 tbsp + 1 tsp baking powder

1/4 tsp baking soda

1 tsp salt

7 tbsp salted butter, cold

1 cup buttermilk, cold

1 caramelized onion

1 cup grated Gruyère

2 tbsp chives, minced

1 egg, beaten

Instruções

Prep mix-ins: At least 2 hours (or the day before) before you want to make the biscuits, slice an onion into long strips and cook over medium/low heat with 2-3 tablespoons of oil or butter. Stir every 5 minutes or so until they have caramelized, about 1 hour. Transfer to a baking tray and let cool. Once cooled, use kitchen scissors or a knife to chop them into smaller, diced pieces. Next, shred the Gruyère cheese and mince the chives. You can store all of these mix ins in the fridge until you’re ready to make the dough.

Make the biscuits: Preheat oven to 425F. In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. Whisk to combine.

Cut butter into 1-tablespoon pieces and add to the flour mixture. Using a pastry cutter (or your hands, or a fork) work the butter into the flour until broken down into pea-sized pieces. If the butter is getting too warm, pop the bowl in the fridge for 5 min before continuing.

Add the caramelized onion, shredded Gruyère and chives. Mix to combine.

Pour in the buttermilk and fold together until a shaggy dough forms. Turn out onto a floured work surface, and bring the dough together into a long rectangle. Cut the rectangle into thirds (reference the video), stack the pieces on top of each other, then flatten out the dough and roll out with a rolling pin into another long rectangle. Repeat this process three more times. (If the dough is getting too warm, transfer to the fridge for 5 minutes to keep it cool).

Roll the dough into a 9x5 inch rectangle and cut into 6 equally sized squares. Place biscuits onto a parchment lined baking sheet and brush the tops with the beaten egg.
