Cheesy Sweetcorn Couscous Fritters: These Are Such a Fab Lun

1/2 cup (180g) of dried couscous
1 cup (150g) of fresh or frozen sweetcorn (if frozen, thaw)
2 large eggs
2 cups (240g) of grated mozzarella cheese
1 knob of unsalted butter
Instruções
Add the couscous to a mixing bowl, then add boiling water to cover the couscous and let it sit for 5 minutes
Once the couscous has absorbed the water, leave it to cool
Once the couscous has cooled, stir through the sweetcorn, eggs and mozzarella until the ingredients are well combined
In a large frying pan, heat the butter over a medium heat and then spoon in two tablespoons of the mixture per fritter
Cook each fritter for two minutes on each side until golden brown
Pack chilled in a lunch bag with an ice pack to keep the fritters cool and fresh.
Storage: Store in an airtight container in the fridge for 3 days.
