Ginger Turmeric Soup

Ingredientes

Plant based chicken or tofu

2-3 Green onions

3 tbsp Ginger sliced/match stick

4 tbsp Garlic minced

2-3 Leek sliced

1 tbsp Sesame seed oil

1 tsp Honey

1 tbsp Black pepper

1 tbsp Turmeric

1 tbsp Cumin/coriander

3 cups Vegetable broth

1 Jalapeño sliced

3 handfuls Spinach

1/2 Lime juice

1 cup White rice

Instruções

Start rice in rice cooker.

Sauté chicken and shred. Set aside

Cook ginger, garlic, green onions, leeks until they begin to turn translucent. Add sesame oil and honey and spices. Continue to cook for a few more minutes.

Add broth. Add chicken and jalapeños. Bring to a boil and add lime juice and spinach.
