Mousse au Chocolat De Mamie

200g dark chocolate
6 egg
Instruções
Melt chocolate in double boiler
Seperate your eggs
While chocolate is melting, beat egg whites in a medium sized bowl until soft peaks form
Whisk (fork) yolks in a small bowl
When chocolate is melted remove inner bowl and pour in yolks
Quickly mix the two
Then fold in gently 1/3 whites at a time
Place in fridge not covered (4)

Ingredients:
6 eggs
200 gr of dark chocolate chips(I use Selection brand)
Melt the chocolate chips in a double boiler(I use a large steel bowl in a large pan filled with water that you bring to a boil then to a simmer)
Do not stir the chocolate chips until you can see they are all mostly softened.
In the meantime,separate yolks from whites
With a fork, whip the yolks in a small/medium bowl.Set aside.
Beat the whites(throw a pinch of salt as you start beating) for a few minutes at high speed until soft peaks form.Set aside.
Once the chocolate has ALL melted ,remove the bowl from the heat and pour the yolks stirring QUICKLY to mix the chocolate and avoid that it hardens.
Using a rubber spatula or large wooden spoon ,fold in the whites ⅓ at a time.
Gently continue folding until most of the white has blended with the chocolate.
Pour the mousse in a medium container/bowl and put in the fridge for 4 to 6 hours.
Do not cover right away as it would cause condensation and a watery mousse!!
Serve with fresh berries.
