Recipe: Crispy Chicken & Lemon Alfredo Gnocchi

2 cups gnocchi
4 tbsp neutral oil
1 tbsp olive oil
1 large chicken breast, sliced in half
1/2 cup flour
1 cup panko bread crumbs
2 eggs
4 tbsp butter
1 ½ cups grated Parmesan
1/3 cup reserved pasta water
Salt and pepper, to taste
1/2 lemon, juiced

Instruções
Cut the chicken breast in half. Use a mallet to smash the chicken thinner.
Take out 3 small pans. In the first pan, add flour, salt and pepper. In the second pan, add the 2 eggs. In the third pan, add the bread crumbs.
Drench the chicken in flour, eggs, then bread crumbs.
Heat a skillet/pan on medium heat. Add in neutral oil. Once hot, add in your chicken and cook for 5-7 mins on the first side, then 3-4 minutes on the second side. Make sure the internal temp is 165F before removing.
Boil a pot of salted water on the stove. Once boiling, add in the gnocchi and let boil for 3-4 mins.
On a separate pan, make the Alfredo sauce. Melt butter on low/medium heat and then add in the reserved pasta water. Slowly stir in the grated Parmesan. Juice the lemon. Add salt and pepper.
On another pan, cook the broccoli. Add olive oil and broccoli. Season with salt and pepper.
Add cooked gnocchi into the pasta sauce.
Serve and top with Parmesan and a lemon wheel. Enjoy!
