Cheesy Garlic Mashed Potato Bake

When I was kid, one of my favourite dinners in the whole world was cheesy topped mashed potato. We used to have it with my Mum's rice cakes and baked beans and it was the best...and I mean the BEST!
I still make the Baked Mashed Potato all the time, but now I do this cheesy garlic version and we usually have it with sausages!
When you bake the mash it get's even lighter and more fluffy, and with the garlic butter and that cheesy top... I swear to you, I would eat a whole bowl of this by itself!

1 ⅕ of white potatoes
60g soft butter
3 cloves of garlic finely chopped
A small handful of parsley finely chopped
60ml milk
100g grated cheddar cheese (Plus extra for the topping)
Salt and ground black pepper
Peel the potatoes and cut them into medium pieces. Place them in cold, salted water and simmer until tender enough to mash.

Heat the oven to 200C
Drain them, return them to the saucepan and mash with a fork. Finish with a potato masher until smooth and fluffy.
Mix the butter with the chopped garlic and parsley. Add it to the potatoes with the milk and cheese and season with salt and pepper.
Stir thoroughly until smooth and combined.
Tip the mash into an oven-proof dish and top with grated cheese.
Bake in the oven for around 25-30 minutes until the top is golden brown
