Sweet Potato Fries

Cornstarch
Rice flour
Bicarbonate
Baking powder
White wine vinegar
Water
Instruções
Cut sweet potatoes into 1cm thick batons
Mix all dry ingredients
Mix together the wet ingredients
Toss sweet potatoes in 1/3 of the dry mixture
Pour in 1/3 liquid, and toss with another 1/3 of dry mixture
Repeat again with remaining 1/3
Fry at 160°C for 4 minutes
Place on wire rack and season immediately
