Marinating The Chicken

Combine ingredients. In a bowl, mix 1/4 cup of olive oil, the juice from 2 lemons, 4 minced garlic cloves, 1 tablespoon of chopped fresh oregano, 1 tablespoon of chopped fresh thyme, 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1 teaspoon of paprika. This mixture provides the signature flavor of Luna Grill chicken.

Coat the chicken. Place 1 to 2 pounds of boneless, skinless chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it’s evenly coated.

Chill. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours. The longer the chicken marinates, the more flavorful it becomes.

Remove excess marinade. Before grilling, take the chicken out of the marinade and let any excess drip off. This step helps achieve a better sear.

Steps:

1. Preheat the grill. Heat your grill to medium-high, reaching a temperature of around 375°F to 450°F. An adequately heated grill creates nice grill marks and seals in moisture.

2. Oil the grates. Lightly brush the grill grates with oil using a paper towel or a brush. This step prevents the chicken from sticking and helps achieve a clean release.

3. Check for flare-ups. Monitor the grill for any flare-ups when the chicken is placed on it. If they occur, move the chicken to a cooler part of the grill to avoid charring.

4. Keep tools handy. Ensure you have tongs and a meat thermometer. Tongs allow you to flip the chicken easily, while the thermometer helps check for doneness, aiming for an internal temperature of 165°F.
