Drop Biscuits

1½ cups all-purpose flour
1 heaping tablespoon baking powder
¼ teaspoon kosher salt
½ cup (1 stick) cold salted butter, cut into small pieces, plus 2 tablespoons, melted, for brushing
¾ cup buttermilk, homemade (see page 5) or store-bought
Flaky sea salt
Instruções
1. Preheat the oven to 400°F. Line a sheet pan with parchment paper.
2. In a large bowl, stir together the flour, baking powder, and salt.
3. Add the pieces of cold butter to the bowl...
4. And use a pastry blender or two knives to cut the butter into the flour mixture until the mixture resembles coarse crumbs.
5. Add the buttermilk while stirring gently with a wooden spoon...
6. And stop right when the mixture comes together. Not overmixing is key!
7. Using two large spoons, drop (hence the name) six mounds onto the parchment-lined sheet pan. Leave them craggy on top!
8. Bake the biscuits until just the craggy edges turn golden, about 20 minutes.
9. Generously brush the remaining 2 tablespoons melted butter on top of each biscuit.
10. Sprinkle the tops with a little flaky sea salt. Serve with absolutely everything!
Store in an airtight container overnight, then reheat them in the microwave (20 seconds per biscuit) or on a sheet pan in a 300°F oven for 10 minutes.
