Oven-Cooked Bacon

Regular sliced, center-cut bacon
Optional rub:
2 teaspoons of chili powder
1/2 teaspoon of smoked paprika
1/2 teaspoon of salt
1/3 cup of dark brown sugar
1/4 teaspoon of cumin
1/4 teaspoon of turmeric
1/4 teaspoon of white pepper
Instruções
Set an oven rack to the center position and preheat the oven to 350F.
Add a wire rack to a steel sheet pan and lay the bacon on the rack in a single layer.
Bake for 20-30 minutes (for thick sliced bacon) depending on your desired doneness.
Notas
Some suggest that starting from a cold oven renders out more fat.
Try cooking at 150f for a period of time to render the fat (130f-140f) then raise to 350 to finish cooking the bacon to a minimum temperature of 145f.
Try parchment paper instead of a rack for easier cleanup.
Try flipping after 15 or 20 minutes to cook both sides evenly.
If adding seasoning, it’s probably best to add after flipping the bacon.
Photos of bacon cooked for 25 minutes (a little crispy) and 20 minutes (flexible).
Bacon will be even more crispy after cooling.
Add about 10 minutes if starting from a cold oven.
Add about 10 minutes for thick bacon.
Found no difference starting from a cold oven, because ours is at temperature in 10 minutes, and practically nothing happened to the bacon until nearly that temperature.
