Beef and Broccoli Stir Fry

Stir Fry Sauce
2 1/2 tbsp oyster sauce
1 tbsp light soy sauce
1/2 tbsp toasted sesame oil
2 tsp sugar
1/4 cup beef or chicken stock
For the Stir Fry
Vegetable oil, to cook
250g broccoli florets
2 tsp fresh ginger, thinly sliced
1 tsp garlic, minced
600g flank steak, thinly sliced against the grain
Salt and pepper, to taste
Cornstarch slurry (1 tbsp cornstarch mixed with 1 tbsp water)
Instruções
Mix the sauce ingredients in a bowl and set aside.
Heat oil in a wok over medium heat, add broccoli and stir-fry for 4 mins until just tender. Add ginger and garlic, cook 30 secs, then remove and set aside.
Add more oil, crank the heat up and sear the beef in batches, about 3–4 mins until browned. Return broccoli, garlic and ginger to the wok.
Pour in the sauce and toss to coat, then stir through the cornstarch slurry. Let it bubble for a minute until glossy and thickened.
Serve hot over steamed rice, topped with spring onion if you like.
