Here’s how I make dumplings at home, using frozen dumplings and a simple coconut curry sauce that’s ready in minutes (so everyone’s happy and can choose if they would like the sauce).

Sauté frozen dumplings (I used pork) in a non-stick pan for 1 minute.
Add 1 to 1½ cups of water, cover with a lid and simmer until cooked through (check the pack for timings).
In a separate pan, sauté grated ginger and 1 tbsp red curry paste, then add 1 tin of coconut milk and simmer for a few minutes.
Add chopped bok choy and stir through.
Serve the dumplings with the coconut curry sauce ladled over the top for anyone who wants it. Finish with chopped spring onions and a drizzle of chilli oil.
Easy and much quicker than the oven version.
