GRILLED PORK CHOPS

Ingredientes

½ cup vegetable oil

¼ cup grated yellow onion

¼ cup firmly packed dark brown sugar

2 tablespoons lime zest

¼ cup fresh lime juice

4 sprigs fresh thyme

2½ teaspoons kosher salt

1 teaspoon ground cumin

¼ teaspoon crushed red pepper

4 (8- to 10-ounce) bone-in pork chops (2 inches thick)

Instruções

1. In a small bowl, whisk together oil, onion, brown sugar, lime zest and juice, thyme, salt, cumin, and red pepper. Place pork chops in a large resealable plastic bag; add marinade, and seal bag. Refrigerate for at least 3 hours.

2. Remoue pork from bag, discarding marinade. Let stand at room temperature for at least 30 minutes.

3. Spray grill with nonflammable cooking spray. Preheat grill to medium-high heat (350 to 400).

4. Grill pork chops with grill lid closed until a meat thermometer registers 145, about 7 minutes per side. Serue with Cilantro-Garlic Sauce.

Notas

Lime balances the richness of these pork chops with its bright flavor.
