Crispy on the Outside, Creamy on the Inside—these Domino Dau

Ingredientes

1 ½ lbs russet potatoes

1 ½ cup heavy cream

1 bunch of sage

1 bunch of thyme

5 bay leaves

4 cloves garlic

¼ cup butter, melted

3 tbsp garlic powder

½ cup grated parmesan cheese

black pepper and salt to taste

1 bunch chives, chopped finely

Instruções

In a saucepan over medium low heat, add in the heavy cream and bring it to a low simmer.

Once it’s simmering, add in the garlic cloves, bunch of sage, and half of the thyme.

Remove the pot from heat and let it infuse for 30 mins on the side.

While the cream is infusing, wash and peel the potatoes and preheat your oven to 350F.

Using a mandolin slicer, or a sharp knife, slice all of the potatoes thin, and place in a bowl.

In a separate bowl, mix together the garlic powder, a hefty pinch of salt, and melted butter.

Season the potatoes with 2 tsp of salt and in an 8 inch circular baking dish, align your potatoes in a row, like dominoes,

Strain and pour over the infused cream directly onto the potatoes, and cover with the melted garlic butter.

Top it off with some fresh cracked pepper, chopped thyme, 5 bay leaves, and ¼ cup of grated parmesan cheese.

Bake at 350 for 1 hour until the potatoes are soft, then broil on high for about 4-6 minutes or until the tops are crispy and golden.

Finish the dish with loads of chopped chives, extra pinches of salt, ¼ cup of parmesan, and cracked black pepper.
