Honey Bbq Chicken Rice

500g Chicken Breast
1 Red Onion
1 Red Pepper
1 Tbsp Tomato Puree
1 Tsp Garlic Granules
1 Tsp Mixed Herbs
1 Tsp Chilli Flakes (Optional)
1 Tsp Salt
1 Tsp Pepper
½ Cup BBQ Sauce
¼ Cup Honey
2 Tbsp Red Wine Vinegar
300g Long Grain Rice (Rinsed)
200g Frozen Mixed Vegetables
800ml Chicken Stock
Garnish
BBQ Sauce
Spring Onion (Sliced)
Instruções
Begin by frying red onion with oil on a medium high heat for a minute or two to soften.
Then, add diced chicken, frying for 2-3 minutes.
Add diced red pepper stir frying everything for a minute or two.
Then, add tomato puree, garlic granules, mixed herbs, chilli flakes (if you like extra heat), salt and pepper, mixing through.
Add BBQ Sauce, Honey and red wine vinegar, stirring through.
Then, add rinsed long grain rice and stir through.
Add some frozen mixed veggies, mix through before pouring in chicken stock, giving it a final stir.
Then, bring to a gentle simmer and cover on low for 20-25 minutes, stirring half way.
And that’s it!
Garnish with extra BBQ sauce, sliced spring onions and dig in!
