Gem Lettuce Salad WITH QUICK-PICKLED SHALLOTS

SHALLOTS
2 small shallots
¼ cup cider vinegar
2 tablespoons freshly squeezed lemon juice
1 teaspoon sweetener of choice (I use allulose)
Salt
¼ cup raw walnuts
6 ounces gem lettuce, washed and dried
1 large avocado, diced
6 medium radishes, thinly sliced
3 tablespoons finely chopped fresh parsley
1 tablespoon finely chopped fresh tarragon leaves
FOR THE DRESSING
3 tablespoons mayonnaise
2 tablespoons olive oil
1 teaspoon Dijon mustard
2 tablespoons freshly squeezed lemon juice
½ cup fresh mint leaves
½ cup fresh tarragon leaves
Salt and freshly ground black pepper
Zest of 1 medium lemon
3 ounces feta cheese, crumbled

Instruções
1. For the quick-pickled shallots: Thinly slice the shallots and add them to a mason jar. Cover with the apple cider vinegar, lemon juice, sweetener of choice, and 2 pinches of salt. Close the lid, shake, and set aside for 15 to 20 minutes.
2. In a small skillet over medium-low heat, toast the walnuts for about 2 minutes, stirring to avoid burning. Set aside to cool and then chop.
3. In a large salad bowl, combine the lettuce, avocado, radishes, toasted walnuts, parsley, and tarragon.
4. For the dressing: In a food processor, combine the mayo, olive oil, mustard, lemon juice, mint, and tarragon and blend for a minute. Add salt and pepper to taste.
5. Pour the dressing over the salad. Top with the lemon zest, feta, and as many pickled shallots as desired.
