Slow-Cooker Brisket

Ingredientes

4 lb. beef brisket, preferably flat cut, cut in half

4 tsp. kosher salt

2 tbsp. neutral oil

2 c. low-sodium beef broth

1/4 c. Dijon mustard

1/4 c. Worcestershire sauce

2 tbsp. fish sauce

2 tbsp. reduced-sodium soy sauce

2 medium yellow onions, sliced into 1/2" wedges, divided

4 garlic cloves, smashed, peeled, divided

1/2 bunch fresh thyme, plus more for topping

3 tbsp. cornstarch

Instruções

Heat a large cast-iron or stainless steel skillet over medium heat until hot. Season both brisket halves all over with salt. Pour oil into skillet and swirl to coat pan. Place one brisket half in skillet and cook, turning halfway through, until seared and golden brown, about 2 minutes per side. Transfer to a large plate. Repeat with remaining brisket.

In a 4-qt. (or larger) slow cooker, whisk broth, mustard, Worcestershire, fish sauce, and soy sauce until smooth.

Add half of onions and 2 smashed garlic cloves to slow cooker. Place first brisket half on top. Add remaining onions and garlic, then place remaining brisket on top. Arrange thyme sprigs around brisket. Cover and cook on High for 5 to 6 hours or on Low for 7 to 8 hours, until brisket is tender enough to easily pull apart with a fork.

Transfer brisket to a cutting board. Discard thyme. Using a spider or slotted spoon, transfer onions and garlic to a medium bowl.

Pour cooking liquid into a small saucepan. Bring to a boil over medium-high heat.

Set slow cooker to Warm and return brisket halves, onions, and garlic to slow cooker. Cover with a lid to keep warm.

In a small bowl, whisk cornstarch and 1/2 cup cooking liquid until dissolved. Add cornstarch mixture to saucepan and whisk to combine. Return to a boil and cook, stirring occasionally, until slightly thickened, 10 to 12 minutes. Keep warm until ready to serve.

Arrange onions and garlic on a platter. Transfer brisket to cutting board. Slice across the grain into 1/4"-thick slices and transfer to platter. Serve with gravy alongside. Top with fresh thyme.
